Place Oreos in a food processor and process until small crumbs form. Cut cream cheese into cubes and add to crushed cookies. Process until ball forms and cookies and cream cheese is fully mixed.
Using a one-inch cookie scoop, portion out filling and roll into balls then place on a parchment-lined cookie sheet. Place in the freezer for 20 minutes.
Heat candy melts in the microwave in 30-minute increments until melted. Stir until smooth. Using a fork, dip each cookie ball into the chocolate. Tap fork on side of the bowl to remove excess.
Place each ball on a parchment-lined cookie sheet to set. Sprinkle on crushed cookies or sprinkles before the chocolate dries.
Serve or store in an airtight container in the refrigerator for up to 2 weeks.

To make ahead - make the filling, freeze, then dip into chocolate before you’re ready to enjoy them.
You can use a Ziploc bag and a mallet or rolling pin to get the same results as a food processor. Be sure to beat or roll out large pieces and chunks.
To get the best results, you’ll want the balls to be hardened enough to withstand the melted chocolate. You can even pop them back into the freezer after you’ve coated them with chocolate and topping of choice.
