There's no better way to cook carrots that are crispy on the outside and tender on the inside than in the air fryer. Perfectly seasoned with garlic, salt, and pepper, then finished with a sprinkle of Parmesan cheese, Air Fryer Roasted Carrots make a terrific side dish or snack.
6-8medium carrots - washed, dried, peeled and cut into spears
2tablespoonsolive oil
½teaspoongarlic powder
3tablespoonsgrated Parmesan cheese
1tablespoon fresh chopped parsley
salt and pepper to taste
Instructions
Add carrots to a medium-size bowl. Drizzle on olive oil and sprinkle with garlic powder, salt and pepper. Toss to coat the carrots.
Add the carrots to the air fryer basket in a single layer. Set the temperature to 360 degrees and the timer to 10 minutes. Shake the basket at the 5-minute time mark and continue to cook for 5-7 minutes until the carrots are fork tender and crispy around the edges.
Remove the carrots from the air fryer, sprinkle on Parmesan cheese and fresh parsley. Serve immediatley

For Leftovers:Store any leftover roasted carrots in a sealed container in the refrigerator for up to 3 days.To Reheat:Place in the air fryer, set heat to 350 and heat until warmed through, 2-3 minutes.
