Ingredients

butter
½
onion - thinly sliced

large eggs

grated Parmesan cheese

sausage
Salt and Pepper to taste
Instructions
Preheat oven to 350 degrees.
Crumble sausage in pan and cook until done. Drain on paper towels.
Heat butter in a cast iron or nonstick skillet. On medium high heat, cook onion until softened. Season with salt and pepper.
In a large bowl, beat eggs and cheese until light and fluffy. Pour eggs into skillet with onions and gently stir with a spatula.
Sprinkle sausage over eggs and cook for 4 to 5 minutes until the egg mixture sets on the bottom and starts to get firm.
Place skillet into oven and turn to broil. Cook until lightly browned and fluffy.
Gently remove to serving platter or cutting board and cut into wedges.

Can be served immediately or at room temperature.
Prepare the frittata in advance, let it cook, wrap in foil or plastic wrap and refrigerate it overnight.
Reheat slices in the microwave or oven for a quick and convenient breakfast or brunch the next day.
