Ingredients

large egg white

old-fashioned oats

chopped nuts
(such as almonds, pistachios, pecans, or walnuts)

coconut shavings

agave syrup

olive oil or warmed coconut oil

sesame seeds

(packed) light brown sugar

dried cherries or cranberries
Instructions
Preheat oven to 300°F.
Combine all ingredients except dried cherries or cranberries in a large bowl; toss to combine.
Spread out on a rimmed baking sheet.
Bake granola, stirring every 10 minutes, until golden brown and dry, 30 minutes. Let cool on baking sheet (it will crisp as it cools).
Mix in 1 cup dried cherries or cranberries.
Notes
Granola can be made 2 weeks ahead. Store airtight at room temperature.
Recipe Variations:
If you love honey, use honey to sweeten this healthy granola!
For a fall twist, add dried apple pieces after baking.
Try swapping the dried cherries for dried cranberries, apricots, or pineapple. Any dried fruits will work!
For extra sweetness, mix in some mini chocolate chips once it cools.
You can also use unsweetened coconut flakes for a bit more texture.
