Million Dollar Sweet Potatoes (Sweet Potatoes Royale)
Sweet Potatoes Royale, also called Million Dollar Sweet Potatoes, is a rich Southern sweet potato casserole made with mashed sweet potatoes, apple butter, brown sugar, marshmallows, pecans, and coconut. Baked until golden and bubbling, it’s a holiday side dish that feels a little extra special and looks beautiful on the table.
4 ½cupsCooked and mashed sweet potatoes (from 4 sweet potatoes)
2Large eggs, beaten
¾cupapple butter
½cupheavy whipping cream
2teaspoonvanilla extract
½teaspoonground nutmeg
¾cuplight brown sugar, divided
½cupmelted unsalted butter, divided
1 ½teaspoonkosher salt, divided
15large marshmallows
¾cuppecan halves
¾cupunsweetened coconut flakes
⅓cupall-purpose flour
½teaspoonground cinnamon
Instructions
Preheat oven to 350°F.
Place mashed sweet potatoes in a large bowl; stir until very smooth. Add eggs, apple butter, heavy cream, vanilla, nutmeg, ¼ cup brown sugar, ¼ cup melted butter, and 1 teaspoon salt; stir until combined and smooth.
Spoon mixture into an ungreased 10-inch cast-iron skillet, or cassserole dish and evenly smooth around the dish. Arrange marshmallows on top.
Stir together pecans, coconut flakes, flour, cinnamon, and remaining ½ cup brown sugar and ½ teaspoon salt in a medium size bowl. Add the remaining ¼ cup melted butter and stir until the mixture is evenly mixed. It's ok if the ingredients clump together. Scatter around marshmallows.
Bake until the casserole is hot and bubbling around the edges and the marshmallows are golden brown on top. The center should look set, not loose or wet, when it’s ready to come out of the oven.
