  • ¾ cup apple butter

  • ¾ cup light brown sugar, divided
  • ½ cup melted unsalted butter, divided
  • 1 ½ teaspoon kosher salt, divided
  • 15 large marshmallows
  • ¾ cup pecan halves

Instructions

  • Preheat oven to 350°F.
  • Place mashed sweet potatoes in a large bowl; stir until very smooth. Add eggs, apple butter, heavy cream, vanilla, nutmeg, ¼ cup brown sugar, ¼ cup melted butter, and 1 teaspoon salt; stir until combined and smooth.
  • Spoon mixture into an ungreased 10-inch cast-iron skillet, or cassserole dish and evenly smooth around the dish. Arrange marshmallows on top.
  • Stir together pecans, coconut flakes, flour, cinnamon, and remaining ½ cup brown sugar and ½ teaspoon salt in a medium size bowl. Add the remaining ¼ cup melted butter and stir until the mixture is evenly mixed. It's ok if the ingredients clump together. Scatter around marshmallows.
  • Bake until the casserole is hot and bubbling around the edges and the marshmallows are golden brown on top. The center should look set, not loose or wet, when it’s ready to come out of the oven.
