Oatmeal Chocolate Chip Cookie Bars are a cross between a soft, moist, chewy oatmeal cookie and your favorite chocolate chip cookie! This simple recipe combines the classic flavors of oatmeal and chocolate into a convenient bar, perfect for snacking, as a dessert, and great for feeding a crowd.
1 ¼cupunsalted butter, room temperature(2 ½ sticks)
¾cup firmly packed brown sugar
½cupgranulated sugar
1egg, room temperature
1teaspoonvanilla
1 ½cupall-purpose flour
1teaspoonbaking soda
1teaspoonsalt
1teaspooncinnamon
3cupold-fashioned rolled oats, uncooked
1 ½cupsemi-sweet chocolate chips
Instructions
Heat oven to 375 degrees.
Beat together butter and sugars until light and fluffy using a hand or stand mixer. Beat in egg and vanilla.
Combine flour, baking soda, salt and cinnamon and add to the butter mixture, mixing well. Stir in the oats and chocolate chips.
Press dough into the bottom of a 9x13 prepared baking pan, making sure to press firmly.
Bake for 20 minutes or until the crust is golden brown.
Cool completely in the pan set on a wire wrack. Cut into squares.

Tips:
Make sure your butter is at room temperature before beginning the recipe. Softened butter will mix more easily with the other ingredients, resulting in a smoother dough.
Don't over-mix. Over-mixing the dough can result in tough bars. Mix the ingredients until just combined for the best texture.
