– Sweet Potatoes
– Brown Sugar
– Ground Nutmeg
– Kosher Salt
Heat the oven to 350 degrees. Slice sweet potatoes into rounds, place in a large pot, and cover with water. Bring to a boil and cook until fork tender. Drain and place them back in the cooking pot.
Prep the Yams
While the potatoes cook, add the butter, brown sugar, granulated sugar, cinnamon, nutmeg, vanilla and salt to a sauce pan. Cook over medium heat until the sugar has melted, about 5 minutes.
Prep the Sauce
Pour the sauce over the yams. Gently stir to coat, then place them into a baking dish. Bake for 10 minutes. Remove the yams from the oven and carefully toss in the syrup.
Bake the Yams
Return the yams to the oven and cook for an additional 15 to 20 minutes until the potatoes are done and the syrup has caramelized.
