Sweetened with maple syrup and flavored with a warm sprinkle of cinnamon, Maple Cinnamon Baked Oatmeal is a breakfast lover's dream come true! It’s the perfect balance of sweet and comforting, making it ideal for lazy weekend mornings or a make-ahead breakfast during the week. Top it with a splash of warm syrup and a handful of fresh fruit, and you’ve got a dish that’s as delicious as it is simple.
Heat oven to 350 degrees. Butter a 9X9 inch baking pan and set aside.
To a large mixing bowl, add cool melted butter and maple syrup. Whisk together until smooth. Pour in milk and add eggs. Whisk together. Add in baking powder, cinnamon, and vanilla. Mix until well blended.
Add in oats and mix well. Let the mixture sit for 5 minutes to allow oats to absorb liquid. Pour into prepared dish and bake for 30-35 minutes until center is set and oatmeal is slightly golden on top.
Remove from oven and let cool for 3-5 minutes. Scoop baked oatmeal into a bowl or plate, top with milk or maple syrup and fresh fruit.
Notes:
To make ahead, prepare the recipe but do not bake. Cover with plastic wrap and store overnight in the fridge. Remove from the refrigerator, let sit on the counter while oven heats then bake as directed.
For meal prep: portion out individual servings and store in sealed containers in the refrigerator. Reheat in the microwave and serve with maple syrup, milk and/or fresh fruit.

Recipe Variations:
Add chopped pecans for a classic Southern take. If you want to be a tad bit fancy, add candied pecans.
Add chopped apples (Honeycrisp or Granny Smith works well) and a handful of raisins for an extra boost of flavor and texture.

For a fall-inspired version, swap half the milk for canned pumpkin and add a teaspoon of pumpkin spice. This might be my favorite!
