There are plenty of little Thanksgiving things I can adjust as I go. If a side dish needs another ten minutes or I change my mind about a serving bowl, no big deal. But thawing the turkey is not one of those jobs I like to gamble with.
I’d much rather move the turkey to the refrigerator a day early and know I’m ready. Once that bird is thawed, everything else feels easier. The turkey can be seasoned, the cooking plan is clear, and I can get back to the part of Thanksgiving I really care about — getting the meal on the table and enjoying the people around it.

When Should You Start Thawing A Turkey?
If you are thawing your turkey in the refrigerator, use this chart as your starting point. USDA recommends allowing approximately 24 hours for every 4 to 5 pounds in a refrigerator kept at 40°F or below.

My advice: when you have the refrigerator space, start a little early. A turkey thawed in the refrigerator can stay there for another 1 to 2 days before cooking, so you have some wiggle room.

How To Thaw A Turkey In The Refrigerator
- Keep the turkey in its original wrapping.
- Place it on a rimmed baking sheet, roasting pan, or tray to catch any juices.
- Set it on the bottom shelf of the refrigerator so nothing can drip onto other food.
- Allow about 24 hours for every 4 to 5 pounds.
- Once thawed, keep it refrigerated until you are ready to cook.
This is the method I recommend whenever possible because it is simple, hands-off, and gives you the most flexibility.

If the turkey is still frozen and you are short on time, cold water is the faster, safe option. Plan on about 30 minutes per pound.

Can You Thaw A Turkey In The Microwave?
Yes, if the turkey fits in your microwave, but you need to be careful. Follow your appliance’s defrosting instructions, and cook the turkey immediately after thawing. Parts of the turkey can begin to warm or partially cook during microwave thawing, so this is not a method for thawing ahead and holding.

- Give yourself an extra day. If your turkey finishes thawing early in the refrigerator, you are still in good shape.
- Keep it contained. A rimmed pan catches any leaks and keeps raw poultry juices away from everything else in the refrigerator.
- Never thaw a turkey on the counter. The outside can warm into an unsafe temperature range while the middle is still frozen.
- Cold water means cold water. Do not speed things up with warm or hot water.
- Read the package. Some specialty or pre-stuffed turkeys are designed to be cooked from frozen. Follow the manufacturer’s directions if your turkey says that.
- Have a backup plan. If the turkey is still icy on Thanksgiving morning, switch to the cold-water method rather than letting it sit at room temperature.

How Do You Know When A Turkey Is Fully Thawed?
A fully thawed turkey should feel flexible instead of rock hard. The legs and wings should move more freely, and you should be able to reach into the cavity and remove the neck and giblet packet without fighting a block of ice.
Check the cavity and the thicker areas around the breast and thighs. A few tiny ice crystals are not a crisis, but solid frozen sections mean the turkey needs more thawing time.
What If My Turkey Is Still Frozen On Thanksgiving Morning?
First, don’t panic and don’t put it on the counter. If it is partially frozen, finish thawing it in cold water, changing the water every 30 minutes.
USDA also notes that poultry can be cooked from frozen, but it will take approximately 50% longer than a fully thawed turkey. If you are cooking from frozen, follow safe cooking guidance carefully and use a meat thermometer to confirm the turkey reaches 165°F in the proper places.
