Meal Prep & Leftover Tips

Crock Pot Lemon Chicken: Prep everything in the crock-pot the night before for a grab‑and‑go meal. Keep leftovers in an airtight container in the fridge for up to 4 days. Reheat gently in the microwave or stovetop.

Simple Green Bean Salad: Try adding toasted almonds, walnuts, or pine nuts for crunch and nutty flavor. Goat cheese crumbles make a nice, creamy substitute for feta. Add fresh chopped basil or parsley. Roasted red peppers or zucchini would be excellent additions.

Scalloped Potatoes: Any leftovers can be stored in the pan, covered tightly, in the refrigerator for up to 3 days. To reheat, place in a microwave-safe dish and heat until warmed through.

Lemon Pound Cake: Store the cake in an airtight container on the countertop. It will be good for up to about 4 days. Lemon Pound Cake freezes beautifully. To serve, thaw it overnight in the refrigerator, then move it to the counter and let it come to room temperature.

Maple Cinnamon Baked Oatmeal: This oatmeal is great for meal prep. Leftovers will last 5 days in the fridge in an airtight container. You can also freeze it for up to 3 months.

Roasted Cabbage Soup: As cabbage roasts, the enzymes break down removing any pungent and bitter taste. Roasting also caramelizes the natural sugars which helps enhance the overall flavors!

Homemade Beer Bread: Beer helps to create fluffy bread while also helping develop the gluten in the bread. I use a can of light beer, but use your favorite.

Whipped Ranch Dip: Work some more veggies into your diet this year. Prep this whipped ranch dip and cut up some veggies like carrots, celery, cucumbers, radishes, bell pepper, snap peas, broccoli and cauliflower, and grape tomatoes to have on hand to snack on!
