Meal Prep & Leftover Tips

Crock Pot Beef Roast: For the most tender roast, I recommend a beef chuck roast. It’s well-marbled and flavorful, and after several hours in the crock pot, it becomes incredibly tender.

Southern Fried Potatoes: Slice thin and slice even. An eighth of an inch is the sweet spot. Too thick and the outside gets done before the inside cooks through. A mandoline makes quick work of this and keeps every slice consistent.

Sour Cream Cornbread: The cornbread is done when the top is golden and a toothpick comes out with just a few moist crumbs. Overbaking is how sour cream cornbread goes dry. Use leftovers for cornbread salad. Or bake a double batch.

Roast Beef Sliders: To make these ahead of time, make the sliders, then cover them with foil. Place in the refrigerator for up to 24 hours before baking.

Spiced Pear Moscow Mule: If you store it properly, the simple syrup will last about 10 days in the fridge. I like to store it in a mason jar with a screw-top lid.

Pumpkin Snack Cake: Add 1 cup of semi-sweet chocolate chips for melty, sweet bites. You can also use toffee bits. Fold in 1 cup of chopped pecans for a nutty crunch.

Cranberry Pecan Chicken Salad: Leftover chicken or rotisserie chicken is a great choice for this salad because it makes it so fast to put together!
