Meal Prep & Leftover Tips

Roasted Chicken With Lemon: For the best crispy skin, place the chicken, uncovered, in your skillet in the refrigerator for at least 1 hour before cooking. This allows the skin to dry out enough to make a huge difference when you roast it.

Zucchini Squash Casserole: For a more traditional Southern squash casserole, substitute the Parmesan with an equal amount of sharp cheddar cheese, or use a mix of both. For extra flavor, add sautéed sweet Vidalia onion.

Mushroom Rice: Try cooking the rice in bone broth instead of regular broth for added protein. Add more veggies at the end, like spinach, kale, green onions (my fav!), and herbs, for added texture and flavor.

Homemade Beer Bread: You can use almost any kind of beer you like. I prefer lighter beers like lager, pilsner, or wheat beer due to their neutral mild flavor. For a more specific flavor profile, you can use ales, an IPA, stouts, or porters.

Cranberry Pecan Chicken Salad: Leftover chicken or rotisserie chicken is a great choice for this salad because it makes it so fast to put together! Chop the chicken so it’s bite-sized. Some recipes shred the chicken, but I’ve found chopping the chicken makes it easier to eat.

Outrageously Good Stuffed Celery: To prep ahead of time—make the cream cheese stuffing mixture, prep the celery, and store them separately. Store in individual containers, up to 2 days.

Spiced Pear Moscow Mule: If you store it properly, the pear-infused simple syrup will last about 10 days in the fridge. I like to store it in a mason jar with a screw-top lid.

Pumpkin Snack Cake: Add 1 cup of semi-sweet chocolate chips for melty, sweet bites. You can also use toffee bits, 1 cup of chopped pecans for a nutty crunch, or 1 cup of dried cranberries or apples for a tart and sweet contrast.
