Meal Prep & Leftover Tips

Creamy Chicken Casserole: Leftover or rotisserie chicken makes this casserole super simple to make! You can use white or dark meat, whichever you prefer. This is also a great way to use up anything on its way out in your fridge (some peas, some broccoli, some mushrooms, etc)!

Skillet Green Beans: Make sure to use a large enough pan when making these. If the pan is too small, the beans will steam instead of blistering, which is what you want. I use a cast-iron skillet.

Homemade Blueberry Vinaigrette: This dressing is especially good on spinach, but use your favorite fresh greens or whatever you have on hand. Toss in feta cheese, goats cheese, or blue cheese for extra flavor and creaminess.

Million Dollar Pound Cake: This is a large cake, so use the proper size tube. I use a 10-inch metal tube pan, and there is enough room for the cake to expand when it bakes. It turns out beautifully every time. A large bundt ban will also work.

Ham and Cheese Strata: Day-old or stale bread is highly recommended, so leave it on the counter the night before making the strata.
This recipe is best made ahead of when you want to serve it so that the bread can soak up all the flavors of the custard mixture.

Crock Pot Beer Cheese: Light Beers are the most commonly used for this cheesy dip. They impart a more light flavor to the dip. For a darker and richer flavor, opt for darker beers like a porter or stout.

Mississippi Chicken Sliders: This mouthwatering chicken is now turned into sliders with melted cheese and a buttery topping.
