Helping you answer the question: “What’s for dinner?” This week we are making the classic combo of homemade tomato soup and grilled cheese. Serve with a green salad and top your soup with some homemade croutons for the perfect cozy fall dinner.
And for Halloween weekend: throw some party meatballs in crock pot to snack on, prep a French toast casserole for Sunday morning brunch, sip on some Mexican hot chocolate, and bake some festive pumpkin crinkle cookies!

Meal Prep & Leftover Tips

Roasted Tomato Soup: Use more than one kind of tomato. A mix gives the soup better flavor than relying on a single variety. Roma tomatoes bring body, while grape or cherry tomatoes add sweetness.

Grilled Cheese: For ultimate meltiness I like to pair American cheese with a good sharp cheddar, Gruyère, brie, or mozzarella.

Homemade Croutons: I’ve found that French, Italian, or sourdough bread works best.

Green Side Salad: For the most flavorful, season all the ingredients with kosher salt and fresh cracked pepper BEFORE drizzling on the dressing.

Crock Pot Party Meatballs: These are always a crowd-pleaser if you have a Halloween party. I like to serve them alongside Hawaiian sweet rolls so people can make little meatball sliders!

Pumpkin Crinkle Cookies: The dough does not have to be refrigerated before baking, but 30 minutes to an hour in the fridge makes it less sticky and easier to shape.

Mexican Hot Chocolate: Try dark chocolate for a more intense cocoa flavor or milk chocolate if you prefer it sweeter. For a vegan option, swap the whole milk with canned coconut milk. Canned coconut milk has a fat content similar to that of whole milk, so it’s the most even swap.

French Toast Casserole: Add in some chopped nuts, swap out the blueberries for a different berry or mixed berries, use pumpkin rolls and add pumpkin pie spice for some fall vibes.
