Meal Prep & Leftover Tips

Melt In Your Mouth Chicken: If your chicken breasts are not the same thickness, cover them with plastic wrap and quickly pound them with a meat mallet. This helps the chicken cook uniformly and keeps it juicy throughout.

Crock Pot Baked Potatoes: I always use Russet potatoes for “baking” because they cook up nice and fluffy. If you want to use a different type of potato, I recommend using Yukon gold or yellow potatoes, which are just as yummy.

Air Fryer Green Beans: If you want to change things up a bit, add your favorite spices, like chili powder or red pepper flakes, for a bit of heat. Fresh lemon zest is also a great addition.

Spinach Salad: Add more veggies like sliced mushrooms, avocado, or cherry tomatoes. Toss on your favorite cheese—cheddar, feta or blue cheese would all be amazing. Add candied pecans for some extra crunch and sweetness!

Whipped Ranch Dip: Add a pinch of cayenne or a dash of hot sauce for a little kick, stir in finely chopped dill, parsley, green onions, or chives for herby freshness, add some grated parmesan for some umami, or paprika and chopped bacon for a smokiness!

Apple Spice Cake: The best apples to use for this recipe are firm apples that bake well. I like Granny Smith, which has a slightly tart flavor that goes well with the sweetness of the cake. You can also use Honeycrisp or Gala apples.

Sausage Cheese Croissant Casserole: Use vegetables like green onions, bell pepper, spinach, or caramelized onions for extra flavor and texture. Substitute mozzarella cheese, gruyere cheese, or Swiss cheese if desired.

Crock Pot Fall Potpourri: There are all kinds of ways to change up the scent. Use grapefruit, lime, or lemon slices instead of oranges, add a splash of almond or vanilla extract, and add in other pleasant smelling herbs, spices, or fresh fruit like cranberries.
