Tomato Cucumber Salad: To make ahead of time – Chop the tomatoes, cucumbers, and onions, then pour over about ¼ to ½ of the dressing and toss everything together. Store in an airtight container. When ready to serve, toss and add more dressing as needed.

Creamed Corn Cornbread Muffins: To ensure they’re perfectly baked, insert a toothpick into the center of each muffin. If it comes out clean, the muffins are done.

Pan Roasted Chickpeas: Make sure the chickpeas are dry before roasting. Drain them, then rinse. Next, I line a sheet pan with paper towels and then spread the chickpeas to dry.

Christmas Snack Mix: When melting the almond bark, go slow and steady. Pop it in the microwave in 30-second increments, stirring in between, so it’s silky smooth without scorching.

Gingerbread Cake: If you want to freeze the cake, once cooled, wrap it in plastic wrap, and then wrap in aluminum foil. It will keep in the fridge for up to 2 months. Defrost it overnight before serving.

Fruit Salad for A Crowd: Choose fruit in season and on sale at your local grocery store for an economical salad to feed a crowd. You can also use frozen fruit for easy, budget-friendly ingredients.
