This week we are making a restaurant-style healthy dinner of pecan crusted salmon with garlic and herb rice, Southern squash and onions, and viral air fryer bananas for dessert.
Valentine’s Day is one of my favorite excuses to make cute, delicious treats, so this week for The Weekend Spread, we are making cinnamon rolls, no-bake chocolate strawberry cheesecake bites, Valentine’s pretzel rods, and a romantic charcuterie board for two!

Meal Prep & Leftover Tips

Pecan Crusted Salmon: Try using walnuts or almonds if you don’t have pecans. If you use walnuts, I like to give them a light toasting to neutralize their natural bitterness. Mix in chopped fresh herbs like parsley, basil, or thyme with the panko and pecans.

Southern Squash & Onions: Mix in some zucchini for a colorful twist, toss in some fresh garlic and herbs, and add some red pepper flakes for heat.

Garlic & Herb Rice: Use the right rice-to-water ratio – For long grain rice, use a 1:1.25 ratio of rice to water. This will ensure that the rice cooks properly and doesn’t become too mushy or dry.

Air Fryer Bananas: Use ripe bananas that are firm to the touch for the best texture, and arrange in a single layer in the air fryer to ensure even caramelization.

Cinnamon Rolls: These rolls rise quicker when in a warm environment. The two places I’ve found they rise best are in the oven with the light on (the oven off, though) and underneath a microwave light or similar.

Charcuterie Board For Two: I like to make sure there’s a combination of savory and sweet, along with creamy and crunchy textures.

Chocolate Strawberry Cheesecake Cups: Swap strawberries for raspberries, blueberries, or blackberries. Mix cocoa powder or melted chocolate into the cheesecake filling for a double chocolate version. Top with a drizzle of caramel sauce for a sweet-salty finish.

Valentine’s Pretzel Rods: Swap the white bark for melted chocolate if you prefer a more decadent coating. Try crushed peppermint candies, toffee bits, or even pink and red M&Ms for extra texture.
