Meal Prep & Leftover Tips

Crock Pot Beef Roast: For the most tender roast, I recommend a beef chuck roast. It’s well-marbled and flavorful, and after several hours in the crock pot, it becomes incredibly tender.

Three Bean Salad: You can use any kind of beans you have on hand or like — garbanzo, black beans, navy beans — or make it a 4 or 5 bean salad. Feel free to add some crunchy veggies like bell pepper and cucumber.

Skillet Cinnamon Apples: For this recipe, you can use almost any kind of apple. I like a combination of Honeycrisp and Granny Smith for a sweet yet tangy flavor. Toss some on Southern pound cake, top your favorite ice cream, or eat for breakfast over pancakes or waffles.

Sausage Frittata: You can throw in almost any leftovers you have in the fridge — mushrooms, spinach, bell pepper, and diced potatoes, chorizo, bacon, or diced ham, cheddar, feta, goat cheese, and pepper jack are all great additions.

Healthy Mushroom Soup: Making You can make this soup in the crock pot. Sauté the onions, carrots, celery, and mushrooms in a skillet first, then transfer everything to your slow cooker on low for 5-6 hours or high for 3 hours.

Roast Beef and Cheese Sandwiches: Use up any leftovers from your pot roast and make these melty, juicy, sandwiches that are loaded with flavor!

Southern Pound Cake: Since this recipe does not have any leavening, it’s important to beat the butter, shortening, and sugar for 5-7 minutes to whip air enough air into the batter.
