Meal Prep & Leftover Tips

Crock Pot Taco Meat: For a lighter option, use ground turkey or chicken. Toss in some diced bell pepper, a drained can of diced tomatoes, corn, or even zucchini for added color, flavor, and nutrition.

Instant Pot Pinto Beans are so easy to make! Seasoned with ham, onion and garlic then cooked in vegetable stock, this no-soak recipe is great as a main or side dish.

Pinto Beans: No Instant Pot? No Problem. You can make these on the stove top as well. And just like the Mexican rice, these beans freeze well. To reheat, I just toss them in a small saucepan on the stove with a lid on low until hot.

Instant Pot Mexican Rice made with white rice, tomato sauce, onions, cumin and chili powder is a great side dish for a weeknight meal or your next fiesta!

Mexican Rice: I always make a double batch and freeze for an easy side in a pinch. To reheat from frozen: place in a microwave safe bowl with a splash of water, cover with a damp paper towel or cover with a plate, cook on high for 2-3 minutes, stir, and continue to cook for 30 second increments until hot.

Avocado Salsa: If you’re not serving the salsa immediately, press a piece of plastic wrap directly onto its surface. This prevents it from browning and keeps it fresh and vibrant until you’re ready to dive in.

Mexican Quinoa Salad: Use leftovers from taco night to make this vibrant salad that’s perfect for a weekday lunch or side dish for dinner.

Piece of apple cinnamon pull apart bread on a white plate with apple chunks.

Apple Cinnamon Pull Apart Bread: I like to use Honeycrisp. I’ve also used Granny Smith apples, which have a slightly tart flavor. You can also mix the type of apples depending on what you have on hand.

Home Run Hot Dog Chili is the best topping for your grilled dogs. Made with ground beef, herbs and spices for a savory recipe that's easy to make.

Hot Dogs with Chili Sauce: Make the chili ahead of time and keep it warm in a slow cooker. This is a great way to set up a buffet and let folks make their own hot dogs!
