Meal Prep & Leftover Tips

Crock Pot Taco Meat: For a lighter option, use ground turkey or chicken. Toss in some diced bell pepper, a drained can of diced tomatoes, corn, or even zucchini for added color, flavor, and nutrition.

Pinto Beans: No Instant Pot? No Problem. You can make these on the stove top as well. And just like the Mexican rice, these beans freeze well. To reheat, I just toss them in a small saucepan on the stove with a lid on low until hot.

Mexican Rice: I always make a double batch and freeze for an easy side in a pinch. To reheat from frozen: place in a microwave safe bowl with a splash of water, cover with a damp paper towel or cover with a plate, cook on high for 2-3 minutes, stir, and continue to cook for 30 second increments until hot.

Avocado Salsa: If you’re not serving the salsa immediately, press a piece of plastic wrap directly onto its surface. This prevents it from browning and keeps it fresh and vibrant until you’re ready to dive in.

Mexican Quinoa Salad: Use leftovers from taco night to make this vibrant salad that’s perfect for a weekday lunch or side dish for dinner.

Apple Cinnamon Pull Apart Bread: I like to use Honeycrisp. I’ve also used Granny Smith apples, which have a slightly tart flavor. You can also mix the type of apples depending on what you have on hand.

Hot Dogs with Chili Sauce: Make the chili ahead of time and keep it warm in a slow cooker. This is a great way to set up a buffet and let folks make their own hot dogs!
