Meal Prep & Leftover Tips

Grilled Pineapple Chicken Skewers: Swap the chicken breasts for boneless skinless chicken thighs, beef or shrimp. Add veggies like red onion and bell peppers to the skewers.

Macaroni Salad: This pasta salad can be stored in the refrigerator for 3 to 5 days in an airtight container or a bowl covered with plastic wrap.

Pineapple Coleslaw: Try adding macadamia nuts, avocado, cilantro, mango, bell pepper, soy beans, or sesame seeds!

Coconut Lime Rice: When planning out this recipe, you’ll need to add about 10 minutes to the cooking time for the Instant Pot to come up to pressure.

Pineapple Coconut Poke Cake: Use the handle of a wooden spoon to poke the holes. Bigger holes mean the pudding soaks all the way down into the cake, not just across the surface.

Tequila Sunrise Cocktail: Even though the tequila is the star of the show, you can just leave it out but make sure to follow the steps to get the beautiful colors of the sunrise.

Strawberry Spinach Salad: Frozen strawberries release too much liquid, making your salad watery. Look for berries that are deeply red all the way through, not pale near the hull.
