Meal Prep & Leftover Tips

Crock Pot Sloppy Joes: Increase the heat by adding diced jalapeños or a pinch of cayenne pepper and bell peppers to the Sloppy Joe mixture, giving it a spicy kick that pairs well with the sauce’s sweetness.

Southern Potato Salad: Start your potatoes in cold water. Don’t add them to boiling water. Starting cold helps the potatoes cook evenly all the way through.

Classic Creamy Pea Salad: Sliced water chestnuts add a satisfying crunch and toasted pecans can be added for additional texture and nutty flavor. Mix them into the salad just before serving to maintain their crunchiness.

No-Bake Cherry Delight Jars: If cherries are not your thing, then go for blueberries, apples, or peaches.

Creamy Fruit Dip: I use regular cream cheese for the texture and flavor, but low-fat can be substituted. You can also make this recipe dairy-free by using coconut milk yogurt and vegan cream cheese.

Blueberry Sour Cream Muffins: To get that perfect dome on the muffins, place the muffin pan in the oven and bake at 425°F for 5 minutes, THEN LOWER TEMPERATURE TO 375°F and bake for 25 minutes or until the tops are golden brown.

Carolina Vinegar BBQ Sauce: Once you’ve made the sauce and let it cool, you can store it in the refrigerator for up to 2 weeks. I keep mine in a mason jar, but any glass container with a lid will work

Buffalo Chicken Flatbread Pizza: You can substitute store-bought pizza dough or crust. You can also use individual Naan bread to make personal pizzas. If you’ve got a local pizzeria nearby, you can pick up some dough there. Yum!
