Meal Prep & Leftover Tips

Country Style Pork Ribs: For this recipe, getting a good sear on the ribs is best. It helps impart extra flavor. I use a cast iron skillet (get it screaming hot) to brown the ribs.

Twice-Baked Potato Casserole: To save time on the day of preparation, bake the potatoes before they are tender. Once cooled, refrigerate them until you’re ready to make the casserole. This step will make the potatoes easier to handle and mash.

Air Fryer Brussels Sprouts: Proper seasoning is crucial for tasty Brussels sprouts. Before and after cooking, sprinkle some salt and black pepper. For variety, try adding balsamic vinegar or parmesan cheese.

Easy Coconut Cake: Even though this recipe specifically calls for a white cake mix, you can experiment with flavors like a yellow, butter, or coconut-flavored cake mix.

Stuffed Mushrooms: Choose mushrooms that are all about the same size – they’ll bake evenly and look prettier on the platter.

Creamy White Chicken Chili: If you plan to freeze it, make the recipe up to the step before adding cream cheese and half-and-half. Add those after thawing and reheating.

Chickpea Salad: Olives, capers, or pickled banana peppers would all be a nice addition. Toss in some cooked quinoa for some added texture and a boost of fiber. Add avocado right before serving for another creamy variation.
