Meal Prep & Leftover Tips

Grilled Lemon Chicken: I almost always make a double batch. One night it is a main dish with veggie sides or for over pasta. The next day it is shredded into chicken salad or tucked into a sandwich.

Grilled Sweet Potatoes: You can microwave and slice the sweet potatoes a few hours before grilling. Just keep them covered in the fridge until you’re ready. When it’s time to eat, brush on the oil, add the seasoning, and get them on the grill.

Spicy Cucumber Tomato Salad: While you might be tempted to use dried herbs, opt for fresh herbs and salting to taste, and you’ll be amazed at the difference in flavor!

Bourbon Arnold Palmer: Swap in a peach-infused bourbon or add a splash of peach nectar to the pitcher. Summer stone fruit and sweet tea were made for each other.

Southern Tomato Pie: Fresh ripe tomatoes are the whole point of this pie. Use the best ones you can find — farmers market, garden, or vine-ripened from the store. The tomato is the star.

Zucchini Bread: Substitute the pistachios with walnuts or pecans, or omit nuts entirely. Add some chocolate chips if you’re into that!

Crock Pot Beer Cheese: Pre-shredded cheeses have additives that keep them from sticking in the bag, so grate your own cheese for the best flavor and texture.

Classic Lemon Icebox Pie: Bottled lemon juice works in a pinch, but fresh lemon is where the bright, tangy flavor comes from. Let the Jello start to thicken before folding: This is the trick that makes the filling silky instead of soupy.
