Meal Prep & Leftover Tips

Mexican chicken taco2 with shredded meat, red peppers, and green onions on corn tortillas with lime wedges on wooden board

Crock Pot Salsa Chicken: I recommend cooking on LOW so that the chicken cooks without drying out and then shred the chicken right in the crock pot!

Instant Pot Pinto Beans are so easy to make! Seasoned with ham, onion and garlic then cooked in vegetable stock, this no-soak recipe is great as a main or side dish.

Instant Pot Pinto Beans: If you like things spicy, add a chopped jalapeño when sautéing the onion and garlic, or toss in a pinch of cayenne pepper with the red pepper flakes.

Avocado Salsa made with fresh avocado, tomatoes, jalapenos, red onion then tossed in a light dressing of lime, olive oil, garlic powder, salt and pepper. This is the perfect dip to serve at your next party and it's also delicious served with fish or chicken.

Avocado Salsa: One of the keys to success in making this salsa is to make sure to cut your veggies into small, uniform pieces. Just take your time. Or toss everything in a food processor and make a creamier guac.

Wooden bowl of colorful mexican quinoa 4 salad with red peppers, corn, beans, cilantro, and green onions on wooden spoon

Mexican Quinoa Salad: If you have more veggies in your fridge, like bell peppers, chickpeas, or red onions, add them to the salad, too!

chocolate chess pie feat from Easy No-Bake Bird's Nest Cookies

Chocolate Chess Pie: Let the pie cool before cutting — it sets as it cools, giving you that rich, fudgy texture everyone loves.

Sugar, salt rimmed glass rimmed glass with a fresh strawberry margarita with ice made with fresh fruit and limes.

Fresh Strawberry Margaritas: For a mocktail version, blend strawberries with sugar and lime juice, strain, and pour over ice and top with sparkling water or soda water!

Buffalo snack mix 7 with waffle crackers and roasted nuts in white bowl on wooden board with red checkered cloth

Buffalo Snack Mix: Add nuts like cashes, pecans, or almonds, and swap pretzels for bagel chips, pita chips, or Chex cereal for a mix of textures.

Golden AF chicken wings close boosted 2, seasoned with black pepper and fresh parsley, served on white plate with lemon and dipping sauce

Air Fryer Chicken Wings: This recipe is the perfect base for whatever seasonings you like. Flavors like lemon pepper or my all-purpose house seasoning are delicious.
