Meal Prep & Leftover Tips

Crock Pot Salsa Chicken: I recommend cooking on LOW so that the chicken cooks without drying out and then shred the chicken right in the crock pot!

Instant Pot Pinto Beans: If you like things spicy, add a chopped jalapeño when sautéing the onion and garlic, or toss in a pinch of cayenne pepper with the red pepper flakes.

Avocado Salsa: One of the keys to success in making this salsa is to make sure to cut your veggies into small, uniform pieces. Just take your time. Or toss everything in a food processor and make a creamier guac.

Mexican Quinoa Salad: If you have more veggies in your fridge, like bell peppers, chickpeas, or red onions, add them to the salad, too!

Chocolate Chess Pie: Let the pie cool before cutting — it sets as it cools, giving you that rich, fudgy texture everyone loves.

Fresh Strawberry Margaritas: For a mocktail version, blend strawberries with sugar and lime juice, strain, and pour over ice and top with sparkling water or soda water!

Buffalo Snack Mix: Add nuts like cashes, pecans, or almonds, and swap pretzels for bagel chips, pita chips, or Chex cereal for a mix of textures.

Air Fryer Chicken Wings: This recipe is the perfect base for whatever seasonings you like. Flavors like lemon pepper or my all-purpose house seasoning are delicious.
