Meal Prep & Leftover Tips

Cheesy Chili Mac: I like using lean ground beef with less fat. You can also use ground turkey or chicken for a lighter option.

Easy Green Salad: For the BEST flavor, season all the ingredients with kosher salt and fresh cracked pepper BEFORE drizzling on the dressing.

Creamed Corn Cornbread Muffins: Toss on some cheese, green chiles or jalapenos, fresh herbs like chives or rosemary, and add some fresh corn kernels.

Cinnamon Sugar Dessert Pizza: Crescent roll dough is quick and easy, but pizza dough or puff pastry will also work. Just keep an eye on the baking time—different doughs may need a few extra minutes in the oven.

Sausage Cheese Bread: You can use turkey or chicken sausage for a lower-fat version of this quick bread. For a veggie twist, add spinach, fresh parsley, basil, or rosemary to the sausage bread.

Crock Pot Sloppy Joes: Increase the heat by adding diced jalapeños or a pinch of cayenne pepper and bell peppers to the Sloppy Joe mixture, giving it a spicy kick that pairs well with the sauce’s sweetness.

Sunshine Fruit Salad: Use blueberries, blackberries, peaches, apples, pineapple, oranges, mango, mandarin oranges, fresh herbs like mint, and a splash of lemon juice, lime juice, vanilla, maple syrup, or sugar.

Crock Pot Applesauce: I love Granny Smith because they give great flavor and a tartness that balances the brown sugar beautifully. That said, almost any apple works — Gala, Golden Delicious, Fuji, and Honeycrisp are all wonderful.
