Meal Prep & Leftover Tips

Southern Fried Catfish: Dry the fish first. Pat every fillet completely dry with paper towels before dredging. Moisture is the enemy of a crispy coating. A dry fillet grips the cornmeal and gives you that perfect crust.

Classic Creamy Coleslaw: This slaw is even better if it’s had time to chill in the refrigerator for at least an hour. You can also prep a day ahead of time if needed.

Homemade Tartar Sauce: I love making a large batch of this to enjoy throughout the week. It lasts 5 days in the fridge!

Southern Fried Corn Fritters: Make sure the oil is hot before adding the batter. If the oil is not hot enough, the fritters may turn out greasy. And avoid overcrowding the pan to allow the fritters enough space to cook evenly and achieve a golden brown color.

Mexican Street Corn Pasta Salad: This pasta salad actually tastes better after chilling for a bit. You can make it a few hours ahead, or even the day before, and refrigerate in an airtight container.

Cinnamon Rolls: These rolls rise quicker when in a warm environment. The two places I’ve found they rise best are in the oven with the light on (the oven off, though) and underneath a microwave light or similar.

Fruit Salad: I use a combination of red and green seedless grapes, pineapple chunks, cantaloupe, strawberries, and blueberries, but feel free to switch up the ingredients with your favorite fruit or whatever is on sale.

Apple Cider Sangria: You can use bourbon or whiskey if you don’t want to use sweet alcohol. Replace the white wine with sparkling white grape or apple juice for a similar light and fizzy mocktail!
