Meal Prep & Leftover Tips

Crock Pot Potato Soup: One of my favorite ways to serve up a big batch of this soup is to turn it into a loaded baked potato in a bowl with a toppings bar. Serve with shredded cheese, bacon bits, chives or green onions, sour cream, and hot sauce!

Chopped Salad: Get creative and customize this salad with your favorite greens, veggies, cheese, dressing, nuts/seeds, dried fruit, pickled veggies, meat, or homemade croutons.

Sour Cream Cornbread: Add de-seeded and diced jalapenos for some heat. One of my favorites is to add honey for extra sweetness. For a cheesy twist, stir in a handful of shredded cheddar or pepper jack cheese.

Southern Caviar: Serve with tortilla chips for a southern version of a “dense bean salad.” Swap the black-eyed peas for black beans, pinto beans, or even garbanzo beans and add diced avocado for a creamy twist.

Crock Pot Hawaiian Meatballs: Just add the frozen meatballs straight to your slow cooker — no need to thaw. They’ll cook low and slow in the sauce until they’re tender and flavorful. Eat as an app, or serve over coconut lime rice.

Roasted Sweet Potato Soup: Great for meal prep—Let the soup cool, then transfer into a container with a lid. Store in the refrigerator for 4 to 5 days.

Mexican Hot Chocolate: For a vegan option, swap the whole milk with canned coconut milk. Spike it with some tequila for an adult hot chocolate!
