Meal Prep & Leftover Tips

Crock Pot Chicken Thighs: Swap the seasoning. Use taco seasoning, Greek seasoning, Cajun spice, BBQ rub, or a smoky paprika blend.

One Pot Mushroom Rice: The secret to fluffy rice is cooking on low and those last 5 minutes off the heat are crucial. This allows the rice to absorb any remaining liquid.

Million Dollar Pie: While you make the filling, leave the pineapple in a bowl lined with paper towels. Then, squeeze it again with a clean paper towel before mixing it into the other ingredients.

Grapefruit Salty Dog: I personally like to use vodka, but you can absolutely use gin if that’s what you prefer. If you’re a gin and tonic lover then using gin is your best bet.

Whipped Ranch Dip: Add a pinch of cayenne or a dash of hot sauce before blending for a little kick. Stir in finely chopped dill, parsley, or green onions along with the chives for extra freshness.

Southern Potato Salad: The biggest mistake in potato salad is overcooking. Cook them to fork-tender—and stop there. You want a fork to slide in with just a little resistance. Check early and check often.

Carolina Slaw Dog: Here’s how to make Carolina Slaw Dogs ahead of time. Make the slaw, chop the onions, and make the chili, and store everything in the refrigerator, covered, until ready to serve. Then, when it’s time, cook the hot dogs, warm the chili, and serve the slaw, onions, and mustard.
