Meal Prep & Leftover Tips

Parmesan Crusted Chicken: Chicken breasts cook more evenly when they’re the same thickness. I like to pound them between parchment paper gently — it keeps them juicy and cooks fast.

Cheesy Scalloped Potatoes: Use a mandolin to slice the potatoes to get uniform slices. You can also use a very sharp knife to cut the slices. The slices should be about an eighth of an inch thick.

Spiced Eggnog Muffins: Customize these muffins by adding fresh orange zest for a bright twist, fresh or dried cranberries make for a tasty pop of flavor, or you can fold in white chocolate chips for extra decadence.

Coconut Date Balls: This recipe comes together so fast that it’s best to get all of your ingredients measured and staged before you start cooking. I make an assembly line in the order of the recipe and let the fun begin.

Chocolate Chip Cheesecake Dip: Recipe Variations – Swirl in a couple of tablespoons peanut butter for a chocolate-peanut butter twist. Make it s’mores-style by adding mini marshmallows and serve with graham crackers. Fold in crushed Oreos instead of chocolate chips.

Pigs In A Blanket: My favorite way to serve them is with Carolina Gold BBQ Sauce or honey mustard, but of course, there’s always the classic way, with ketchup.

Mistletoe Mimosas: Add a splash of orange juice or pomegranate juice for an extra layer of flavor. Substitute cranberries with frozen raspberries or pomegranate arils for a fruity spin. Swap Prosecco with sparkling water or extra sparkling apple juice for a mocktail and kid-friendly drink.
