Meal Prep & Leftover Tips

Baked Ranch Chicken – Sheet Pan Recipe with golden chicken thighs, roasted red onions, and mashed potatoes on white plate

Baked Ranch Chicken: You can season the chicken and store it in a zip-top bag in the fridge up to 24 hours in advance. When you’re ready to cook, just place everything on the sheet pan and pop it in the oven.

Mom's Baked Cheesy Rice served on a white plate with a fork, garnished with fresh parsley and green onions

Mom’s Baked Cheesy Rice: Any rice will do—white, brown, jasmine, or basmati. Adjust the seasoning to complement the rice you choose. For a low-carb option, you can even use cauliflower rice.

Balsamic Vinegar Strawberries: I personally love these served over ice cream, but they are also wonderful with pound cake, bread pudding, or French toast. Don’t skip the step of letting the strawberries marinate. This allows the flavors to meld together beautifully.

Sausage Cheese Cornbread Quiche baked in white dish with herbs and black pepper garnish on blue patterned tablecloth

Sausage Cheese Cornbread Quiche: This quiche uses cooked sausage and cornbread. My pro tip is to cook these two ingredients beforehand, up to 3 days, and refrigerate. If sausage isn’t your thing, substitute with bacon, or even leftover baked ranch chicken.

Green Bean and Potato Salad: Do not overcook the potatoes. Fork-tender and holding their shape is the goal. Overcooked potatoes turn mushy in the dressing, and the whole texture of the salad suffers.

Oatmeal chocolate chip cookie bars, baked and cut into squares stacked on a white plate served along side cup of tea.

Oatmeal Chocolate Chip Cookie Bars: Store the bars in an airtight container at room temperature for 3-4 days. You can freeze the bars for up to 3 months and thaw them at room temperature before serving.

Glass of homemade lemonade with a lemon wedge and sprig of mint on a wooden board.

Refreshing Homemade Lemonade: Add strawberries, raspberries, or blueberries for an extra fruity flavor. Add vodka for an adult version of lemonade.
