Meal Prep & Leftover Tips

Crock Pot Chicken Parmesan: Use a good-quality or homemade marinara. The sauce is everything in this dish. Use a jar you would eat on its own. If you have a batch of homemade spaghetti sauce in the fridge, even better.

Caprese Salad: Fresh mozzarella is a must. I like using mozzarella pearls because they save time and mix perfectly with the tomatoes. If you can’t find pearls, cutting a ball of fresh mozzarella into bite-size cubes works just as well.

Easy Green Salad: For the BEST flavor, season all the ingredients with kosher salt and fresh cracked pepper BEFORE drizzling on the dressing.

Buttery Garlic Knots: These can be stored at room temperature in an air-tight container for 3 days. Otherwise, they can be frozen for up to 2 months or stored in the refrigerator for up to 1 week.

Snickerdoodle Cheesecake Bars: Make sure all of your ingredients are at room temperature. This will ensure that everything blends smoothly.

Crock Pot BBQ Beef Roast: Serve it loaded up on warm bread for BBQ beef sandwiches, as a main dish with your favorite sides, piled on fresh greens for a hearty salad, in tacos or burrito bowls, over rice or noodles for an easy lunch or after-school snack.

Southwest Ranch Dip: Not only does Southwest Ranch Dip double as a spread for sandwiches, wraps, and burgers, it’s so good with roasted potatoes or carrots. I’ve also turned it into a salad dressing tossed with crisp iceberg lettuce and tomatoes.

Peachy Rose Sangria: This drink is great when you’re hosting a party or entertaining. It’s one of my “go-to” cocktails because it really allows me to stretch my budget since it has just a few ingredients.
