Here’s my way of making over-easy or over-hard eggs:
- In a large skillet, melt two tablespoons of butter on medium heat.
- One at a time, crack the eggs and gently place them in the pan. Turn down the heat to low.
- Cook until whites are set and yolks thicken. For over-hard eggs, carefully flip the egg and cook until the yolks are firm. Remove from pan and sprinkle with salt.
