Donya’s Tips for Melt in Your Mouth Chicken

Mayo is the secret, and here is the why. Mayonnaise is an emulsion of oil, egg, and acid. That combination does three things in the oven. The oil keeps the chicken from drying out, the fat browns beautifully under heat, and the egg sets into a golden, slightly crisp crust. It is not just convenient. It is doing real work.

Pound your chicken to an even thickness. Use a meat mallet to even them out before you coat them. When the chicken is the same thickness throughout, it cooks evenly from edge to edge. No dry ends, no undercooked center.

Be generous with the coating. Do not be shy here. Spread the mayo and parmesan mixture all the way to the edges and make sure every bit of chicken is covered. The coating is what becomes that golden crust.

Check the temperature, not just the clock. Every oven is a little different, and chicken breasts vary in size. I always check the thickest part with an instant-read thermometer. When it reads 165°F and the top is deep golden with clear juices, you are done.

Make-Ahead and Storage

This is the kind of recipe that makes a busy week so much easier. A little prep ahead of time and dinner is ready when you need it.

Make Ahead. Mix the coating up to two days ahead and keep it covered in the refrigerator. When you are ready to cook, spread it over the chicken and bake. The whole thing takes less than ten minutes of hands-on time.
