Homemade Greek Salad Dressing is so simple to make and so much better than anything you can buy at the store! It’s bright, fresh, with just the right amount of garlic and herbs. And while it’s delicious drizzled over lettuce, feta, and olives, it also makes a terrific marinade.

There’s a little secret about how A Southern Soul started. It was all because of my homemade salad dressings. Mr. SS has always loved them. The thing is, I’d make a dressing, we’d rave over it, then I’d forget how I made it. But not this one! My Mediterranean salad dressing can be made in a matter of minutes with simple ingredients that you probably already have in your pantry.

My #1 Salad Dressing Tip

Here’s my go-to trick—skip the mixing bowl and make your dressing right in a mason jar! Just add all the ingredients, screw on the lid, and shake it up. No whisk, no mess. Plus, you can simply pop it into the fridge and use it throughout the week.

Ingredients To Make Greek Salad Dressing

Greek salad dressing ingredients with olive oil and red wine vinegar in a jar with whisk.
  • Olive Oil – Use a high-quality olive oil for dressings.
  • Red Wine Vinegar – This is a mild vinegar with a very savory taste. White vinegar will work, but I don’t recommend apple cider vinegar.
  • Garlic – Fresh garlic is best!
  • Dijon Mustard – Packed with spices, this is a great way to bring more flavor without extra ingredients.
  • Dried Thyme and Oregano – Keep it simple here, but check to ensure your dried herbs are still fresh. I generally keep them for only 6 months.
  • Salt and Black Pepper

Mix It Up: Recipe Variations

  • Sweet – Add a teaspoon of honey for a touch of sweetness.
  • Citrus Kick – Substitute fresh lemon juice for red wine vinegar to create a lemon vinaigrette.
  • Fresh Herbs – Use fresh herbs if you have them on hand—just double the amount.

How To Make This Greek Dressing Recipe From Scratch

Greek Salad Dressing whisked together in a bowl.
  1. Combine ingredients: Add all the ingredients into a jar with a tight-fitting lid or a small bowl.
  2. Mix it up: Shake vigorously or whisk until the dressing is fully emulsified.

How Long Will Easy Greek Vinaigrette Keep?

Homemade Greek salad dressing will keep for up to 1 week in the refrigerator. Since it’s made with fresh ingredients like garlic and vinegar, be sure to store it in a sealed jar or airtight container. Give it a good shake before using—natural separation is totally normal.

Frequently Asked Questions

Can I use fresh herbs instead of dried?

Absolutely! Fresh herbs add an extra pop of flavor. Just double the amount since dried herbs are more concentrated.

What type of olive oil should I use?

Extra virgin olive oil is best for its flavor and health benefits.

Ways To Use This Healthy Homemade Dressing

I love this dressing with just a classic green salad, but it also works as a great marinade for grilled pork tenderloin, or roasted chicken breasts. It can also be used to make a quick Mediterranean pasta salad, Greek Pasta Salad, or even my favorite, drizzled over tomatoes and red onions! You can even use it to make quick marinated vegetables, kalamata olives with feta cheese, or cucumbers.

  3. Donya, Every thing is here except the garlic can be pickled more or less, so why only the 7-10 shelf life? I could drink this so may need a giant jar.

    1. Hey Douglas!
I could almost drink it as well. I limited the length of time just for the purpose of food safety.
      Have a great day,
