In North Carolina, we are known for our spicy, hot vinegar sauce. I make my own Carolina Vinegar BBQ Sauce, and it’s become a staple in my kitchen. Now, I’m giving my South Carolina friends the due they deserve with my homemade recipe for their famous Carolina Gold BBQ Sauce.
The yellow mustard base in Carolina Gold comes straight out of South Carolina’s rich barbecue tradition. It is believed to have been inspired by German immigrants who settled in the region in the 1700s, bringing their love of mustard with them. Over time, that tangy mustard was blended with vinegar, sugar, and spices to create the bold, golden sauce we know today.
This Carolina Gold BBQ sauce recipe is one of the most-requested things I make all summer long. Ten minutes, one pot, and a jar of something truly special.

- Simmer low and slow: The sauce only needs 5 minutes but keep the heat low once it comes to a boil. High heat scorches the honey and sugar. Low and slow keeps it smooth and glossy.
- Make it the day before: Good the moment it is made, but genuinely better the next day. The mustard mellows, the vinegar softens, and the spices settle into each other. Make it 24 hours ahead when you can.
- Use a good yellow mustard: The mustard is the heart of this sauce. Classic yellow mustard is traditional and exactly right here. French’s is my go-to.
- Adjust the heat last: If you want more kick, add cayenne a pinch at a time after the sauce has simmered and cooled slightly. Much easier to add heat than take it away.
- Whisk constantly while it simmers: The honey and sugar can settle to the bottom and scorch quickly. Keep stirring for the full 5 minutes and the sauce comes out smooth every time.

- Yellow Mustard – Any brand you like will do just fine. This is the heart of the sauce, giving it that bold, tangy flavor for which Carolina Gold is known.
- Honey – Adds a smooth sweetness that helps balance out the vinegar and mustard.

- Black Pepper – I like to use freshly cracked for the most flavor, but use what you’ve got.

- Garlic Powder & Onion Powder – Simple, no-fuss seasonings that lend this sauce a well-rounded, rich flavor.
- Salt – Just a pinch to bring all the flavors to the forefront.
- Cayenne Pepper – Totally optional, but if you like a little kick, don’t skip it.
Flavor Tweaks To Make It Your Own
- Add a smoky twist: A splash of liquid smoke or a half teaspoon of smoked paprika adds a deeper, smokier character, outstanding on pulled pork or brisket.
- Turn up the heat: Stir in Crystal or Texas Pete hot sauce, or add more cayenne for a sauce with serious kick.
- Add an herbal note: A tablespoon of chopped fresh thyme or parsley stirred in after cooking adds brightness and a garden-fresh finish.

How To Make This Sauce
- Combine everything. Add all the ingredients to a small saucepan and whisk until smooth and well combined.
- Simmer. Bring the sauce to a boil over medium heat, then immediately reduce to low and simmer for 5 minutes, whisking frequently. You want a gentle simmer, not a rolling boil.

Troubleshooting — When the Sauce Is Not Quite Right
Too sharp or vinegary: Add more honey — a teaspoon at a time — and whisk. A pinch more salt also helps round out sharp edges.
Too sweet: A small splash more of apple cider vinegar brings the balance back. Add it after the sauce has cooled slightly so you can taste accurately.
Too thin: Simmer for an extra 2 to 3 minutes with the heat slightly higher. The sauce also thickens naturally as it cools.
Bitter or burnt flavor: The heat was too high during simmering. The honey and sugar scorch quickly. Keep the heat at a true low simmer and whisk constantly.
Sauce separated in the jar: Completely normal. Give it a good shake or stir before using. The mustard and vinegar can separate slightly in the refrigerator.
