  • Soften your cream cheese the right way. Don’t rush this step. Cold cream cheese will leave you with lumps no amount of stirring can fix. Place the sealed block in a bowl of warm (not hot) water for about 15 minutes. It softens beautifully every time.
  • Whip your cream to soft peaks — not stiff. You want light and airy, but still just a little glossy and soft. Soft peaks hold their shape gently when the beaters are lifted.
  • Fold, don’t stir. Once your whipped cream is ready, fold it in using a rubber spatula in slow, gentle turns from the bottom up.

  • 1 cup powdered sugar
