I saved this recipe awhile ago and decided to make it. It is fantastic. I made it exactly as the recipe stated. I have a large cast iron skillet and browned the chicken as you stated. Crock Pot Chicken Thighs is a main dish recipe creation that’s been on repeat in my kitchen for several weeks. It’s uncomplicated yet has a combination of flavors that go perfectly together.   • Chicken Thighs – I use bone-in, skin-on for the best flavor and texture.. You can use boneless, skinless chicken if you prefer.
  • For The Sauce – Ketchup, Soy Sauce, Honey
  • Seasonings – Onion Powder, Dried Mustard, Dried Thyme, Dried Parsley, Salt and Pepper

Can I Cook Chicken on High or Low in a Crockpot?

Cooking chicken on low is generally better for tenderness and flavor, taking 6-8 hours. High works too, but for 3-4 hours, it can be less tender.

Do I Need To Sear The Chicken First?

For this recipe, getting a good sear on the chicken is best. It helps impart extra flavor. I use a cast iron skillet (get it screaming hot) to brown the chicken. Work in 2 batches so the chicken does not touch while searing the skin.

Can I Use Boneless Chicken Thighs?

Yes, you can. You can use boneless, skinless thighs if you can’t find bone-in, skin-on thighs at the store. I recommend searing the chicken to impart extra flavor before adding it to the crock pot.

Can You Put Raw Chicken Straight Into a Slow Cooker?

Yes, you can put raw chicken straight into a slow cooker. Season it, then cook on low for 6-8 hours or high for 3-4 hours, ensuring the internal temperature reaches 165°F (75°C) for food safety.

Substitutions For This Recipe

How Do I Thicken The Sauce?

Juicy, fall-apart chicken thighs slow-cooked in a bold, savory-sweet sauce made with garlic, honey, and soy. It’s comfort food with big flavor—just the kind of dish that makes weeknights easier and weekends even better.

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • salt and pepper
  • ¾ cup ketchup
  • cup soy sauce
  • cup honey
  • 3 tablespoon minced garlic
  • ½ teaspoon onion powder
  • ¼ teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ¼ teaspoon dried mustard
  • 2 tablespoons fresh chopped parsley – optional

Instructions

  • Heat olive oil in a cast-iron skillet or heavy bottom pan. Sprinkle chicken with salt and pepper and sear, skin side down until golden. Remove the chicken from the pan and place skin side up in the crock pot.
  • To a medium-size bowl, add ketchup, soy sauce, honey, garlic, onion powder dried thyme, dried parsley, and dried mustard. Whisk together and pour over the chicken. Place lid on the crock pot and cook on HIGH for 3 hours or LOW for 5 hours until chicken is done and the sauce has thickened.
  • Remove chicken and place on a serving dish. Spoon over the sauce from the bottom of the crock pot, sprinkle with fresh parsley and serve.

  1. If you have chicken thighs that are frozen would this recipe work? Could you do all the same but maybe just cook it on low for like 5 hours in the crock put instead of low for 3?? I wanna make this tonight! Sounds so good!

      That’s a great question, I hope I’m not too late seeing this to help out! You can absolutely use frozen chicken thighs, but the problem is searing the chicken first. When I have frozen chicken thighs, I defrost them in a bowl of lukewarm water for about an hour or two and then sear them in a cast iron, as per the directions in the recipe. I then transfer them to the crock pot and cook them on high for about 3.5 to 4 hours instead of just 3 hours. I hope this helps, thank you for your interest in this recipe! I am a huge garlic lover so I do use 3 tablespoons of fresh minced garlic, but if you want to use less than that you can, it’s completely up to you. I like a more garlicy flavor in this recipe, but cooking is all about personal preferences, so I would recommend using half the written amount if you’re worried the garlic could overwhelm the dish.         So, I layered the bottom with halved golden potatoes, then put the skinless, deboned chicken thighs on top, then layered halved carrots on top. I doubled the sauce recipe. Turned out amazing. The kids loved it, wife and I loved it. Because the thighs were not seared, they released a lot of moisture that watered down the sauce and cooked the dish a little more like a pot roast, while keeping the flavor.

  3. OMG….this was beyond delicious! I subsituted sugar free maple syrup for honey and teriyaki sauce (Panda Express) for soy sauce. I did not want to wait for a grocery order to make this wonderful dish. Kudos to Donya! This is by far the “best” crock pot chicken thigh dish I have ever made (sorry Betty Crocker). Next time I will go sugar free for the ketchup to lower the carbs (idkw….I’m a bit carbfree obsessed). It really gives me brown stew chicken vibes. Love and going for seconds in Maryland!

    My husband, son and I devoured these. The flavor was amazing and it’s so easy. I did not have time to brown them first and next time I will either make the time or use skinless. The sauce was a bit watery underneath, but it thickened on top of the chicken and it was perfect. This is definitely a keeper!

    My whole family raved about this recipe, including my foodie brother who got the cooking gene – I am not a super confident cook, but this made me look like a pro. I used skinless and boneless thighs so my end result was not as pretty – it looked more like pulled chicken – but the flavor was out of this world. I also added a little heat and served it over rice – with actual garnish choices of scallions and chopped cashews. My brother said, “Look at you with the add-ons!” What can I say, you inspired me!     I made this chicken thigh recipe and it was delicious! The only thing I changed on it was that I added fresh pineapple and garlic jalapeño seasoning. It made my house smell so good while cooking and all plates were cleaned.
