Like many other yummy recipes I’ve created, this one came about out of necessity. Here’s the back story: I needed a dessert, and I wanted ice cream but didn’t have any. After digging around in my pantry, I discovered I did have all the Rocky Road ice cream ingredients, so I thought, why not make a candy dessert with them? And so, this Rocky Road Candy dessert was born!

- I get a quick chocolate fix, but this easy-to-make gourmet candy is perfect for gift-giving and makes perfect party snacks.
Chocolate Marshmallow Candy Cluster Ingredients
- Chocolate Chips – I like semi-sweet chocolate chips, but you could use milk chocolate or dark chocolate. A chopped candy bar will work too!
- Butterscotch Chips – These emulate the caramel that’s in Rocky Road ice cream.
- Mini Marshmallows – Mini keeps everything bite-sized and easier to eat.
- Butter – To thin out the chocolate and help it combine better with the other ingredients. Vegetable oil won’t work because it needs to solidify when chilled for the chocolate to set properly.
- Chopped Walnuts – I like to use walnuts because I always have them in the pantry. You can go classic Southern and add pecans, or use almonds or peanuts.
Variations And Additions
- For a twist, try this with white chocolate instead of semi-sweet and peanut butter chips instead of butterscotch.
- Add pretzel bits, crushed potato chips, or salted toffee for more saltiness.
- Top them with a bit of sea salt to bring out the chocolate!
- You can make these candy clusters into bark by pouring them onto a baking sheet, cooling them, and breaking all the pieces apart.
How To Make Rocky Road Clusters
- Melt the chocolate, butterscotch chips, and butter in the microwave in 20-second intervals. Stir between each time until fully melted and smooth.
- Fold in the marshmallows and walnuts to coat.
- Mix all the ingredients together until the nuts and marshmallows are coated.
- Use a tablespoon to drop 1-inch-sized mounds onto a wax or parchment paper-lined baking tray. Repeat until all the mixture is formed into clusters. Cool in the fridge for about 10 minutes then enjoy!
Donya’s Success Tips
- Use a glass microwave-safe bowl: This is the easiest way to melt the chocolate without worrying about the bowl getting too hot to touch.
- A silicon food scraper is awesome for this! A spatula with slightly curved edges (known as a food scraper) works well for mixing the melted chocolate and folding in the ingredients because it scrapes up every last drop of chocolate.
- To gift these, wrap them in cellophane bags tied with ribbon to match the holiday season. They transport well but should be kept cool.
