This is a terrific recipe for using up leftover turkey or chicken. If there are no leftovers, I snag a rotisserie chicken from the supermarket to save time and keep things simple.

Interesting flavors! I had leftover chicken from last nights instant pot dinner & homemade mayo to use up. My husband suggested making chicken salad. I looked for a different recipe & stumbled upon this. I’ve never had anything like it. It’s great & my little 20 month old toddler is gobbling it up.
