Is there anything more comforting and cozy than a warm bowl of soup? I love having homemade soup recipes at the ready or having one stashed in the freezer for busy days. Whether it’s crockpot ham and potato soup, roasted cabbage soup or lasagna soup, I know I’ve got a meal that will make me and my family happy and satisfied.
I’m sure that every family has its own version of vegetable soup. Whether it’s made with or without ground beef, stew beef, chicken, or veggies alone like my garden veggie soup, almost everyone I know has a fond memory of a warm bowl of homemade soup. And, of course, that includes me!

Donya’s Tips and What To Know
- Brown your beef well. Taking a few extra minutes to brown the ground beef adds a deeper, richer flavor to the soup—totally worth it!
- Cut potatoes evenly. Keeping potato pieces about the same size helps them cook evenly, no matter which cooking method you use.
- Use what you have. Frozen mixed vegetables make this recipe quick and easy, but if you’ve got leftover veggies in the fridge, toss them in!
- Make it ahead. This soup tastes even better the next day. Store it in the fridge overnight and reheat slowly before serving.
- Freeze for later. Let the soup cool completely, then store it in a freezer-safe container for up to 3 months. It’s a lifesaver on busy nights.
Make it a meal with creamed corn cornbread muffins, and serve with a fresh salad for a meal your family will love!

Vegetable Beef Soup Ingredients
- Ground chuck: this is similar to ground beef but is a bit fattier, which gives the soup more flavor. Beef stew meat or cubed chuck roast can be used if you like.
- Vegetables: onion, potatoes (red potatoes or russet potatoes), crushed tomatoes, diced tomatoes with green chilies, and frozen vegetables (carrots, green beans, and peas) make up the veggies in this soup.
- The seasoning – my Southern Soul House Seasoning is the best choice for bringing all of the flavors together. You can add red or black pepper for added spice as well.
- The broth: to make the broth, you will need beef broth and water.
- For the garnish: fresh chopped parsley or chives are my favorite.

3 Ways To Make This Vegetable Beef Soup Recipe
One of the best things about this recipe is that it works beautifully no matter how you like to cook. Whether you’re using your Crock Pot, stovetop, or Instant Pot, you’ll end up with a hearty, homemade soup full of flavor and comfort.
Crock Pot Vegetable Beef Soup (Slow Cooker)
- Brown the ground beef in a skillet and season it with your favorite spices.
- Transfer the cooked beef to your slow cooker, then add the chopped onion, diced potatoes, frozen mixed vegetables, crushed tomatoes, tomatoes with green chilies, additional seasoning, and beef broth.
- Cover and cook on Low for 6–8 hours until the vegetables are tender and the flavors come together.
Stovetop Vegetable Beef Soup
- In a large Dutch oven, brown the ground beef and stir in your seasoning.
- Add the onion, potatoes, frozen vegetables, crushed tomatoes, tomatoes with chilies, and beef broth.
- Stir to combine, bring to a gentle boil, then reduce the heat and simmer for about 30 minutes.
- This method gives you a little more control and fills your kitchen with that cozy, home-cooked aroma.
Instant Pot Vegetable Beef Soup
- Turn your Instant Pot to Sauté and brown the ground beef with your seasoning.
- Add the onion, potatoes, frozen vegetables, crushed tomatoes, tomatoes with chilies, and beef broth.
- Secure the lid and set it to Pressure Cook for 8 minutes. When the timer ends, allow the pressure to release naturally for about 20 minutes before opening.
Storage + Reheating
Leftover Vegetable Beef Soup keeps beautifully! Once cooled, store it in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. When you’re ready to enjoy it again, reheat gently on the stovetop or in the microwave. If the broth has thickened a bit, stir in a splash of beef stock or water to bring it back to that rich texture.

- 1 tablespoon Southern Soul House Seasoning
- 1 medium chopped onion
- 2 medium peeled and diced potatoes
- 1 28 ounce can crushed tomatoes
- 1 10 can Rotel tomatoes with green chilies
- 2 10 ounce packages of frozen vegetables
- 1 32 ounce box of beef broth
- 1 cup water
- 1 teaspoon salt
Instructions
- In a large cast-iron skillet, brown ground chuck. Add in Dan-O's Spicy Seasoning and stir. Add cooked meat to the slow cooker.
- Add in crushed tomatoes, Rotel tomatoes and chilies, chopped onion and potatoes, frozen vegetables, house seasoning, beef stock, water, and salt. Stir.
- Cook on low for 6-8 hours or on high for 5-6
- When ready to serve, stir soup, taste and adjust seasoning. Ladle into bowls and top with fresh parsley if desired.

Great catch — thanks for pointing that out! You can use about 1 to 1½ teaspoons of Dan-O’s Spicy Seasoning, depending on how much heat you like. Feel free to adjust to taste — it’s easy to add a little more if you want an extra kick.

I’ve made a similar recipe for years. Instead of the crushed tomatoes the recipe calls for a jar of chunky spaghetti sauce. The best comment I ever received was from a child,”good chili but next time leave out the vegetables.”🙂
