
Summer, the 4th of July, and the Joy of Feeding a Crowd

This 4th of July is not just any cookout. America turns 250 years old and that deserves a table worth celebrating. I have been hosting 4th of July gatherings for years and I know exactly what people want — good food, a cold drink, and a yard they do not want to leave.
This is your complete menu from the first bite to the last sparkler. Everything here has been made in my kitchen, tested on real crowds, and earned its spot on this list. Use it as a full menu or mix and match what works for your table.

Your Complete 4th of July Timeline
- 2 Days Before: Make the dip, Southern caviar and bbq sauces. Prep the coleslaw dressing and store it separately. Make the pound cake — it gets better as it sits.
- The Night Before: Make the coleslaw and refrigerate. Prep the hashbrown casserole and store unbaked. Make the marinated appetizers. Prep the fruit salad and hold the dressing. Cook the pulled pork, shred it and store in the fridge. Set the table and gather your serving pieces.
- Morning Of: Pull the beef or chicken out to come to room temp. Bake the hash brown casserole. Slice and arrange the appetizer board. Chill drinks and get the music set up.
- 2 Hours Before: Fire up the grill. Dress the coleslaw and fruit salad. Pull together the dessert table. Set out serving utensils and napkins.
- 1 Hour Before:Grill the main. Plate the cold sides. Warm anything that needs it. Pour yourself something cold.
- At the Party: Set out appetizers first. Grill the main while guests snack. Everything else is already done. You are at the party — not in the kitchen. That is the whole point.

Build around one main: Pick your centerpiece — pulled pork, grilled chicken, or London broil — then fill in the sides around it.
Make-ahead is everything: At least half of this menu can be done the day before. You should be enjoying the party, not stuck in the kitchen.
Serve cold sides cold and hot sides hot: Set cold salads in bowls of ice for outdoor serving. Use a slow cooker to keep hot sides warm all day.
Double the dessert: People always go back for seconds on the 4th. Make two desserts and do not apologize for it.
