The Cookout My Family Looks Forward to All Year

Memorial Day has always felt like the real start of summer in my house. I fire up the grill, the backyard fills up with people I love, and the table stretches as long as it needs to. It is the holiday where I truly get to do what I love most — cook for a crowd and sit down together.
Over the years, I have put together what works and what doesn’t for this kind of gathering. These Memorial Day recipes cover everything you need. Appetizers to keep people happy while you’re grilling. Sauces you’ll want to make from scratch. Make-ahead salads that free up your morning. Sides that hold up in the heat. Mains built for the grill and the slow cooker. And desserts that taste like summer itself.
Every single recipe here has been tested in my kitchen. I put this collection together so you don’t have to guess what to make. You’ve got everything you need right here.
Happy Memorial Day!

A Few Tips That Always Make the Day Run Smoother
A cookout for a crowd is not the time to figure things out as you go. Here is what I have learned from years of making Memorial Day happen with a full yard and a full table.
Stock up on more ice than you think you need. Coolers drain fast on a hot day. Buy at least twice what seems reasonable and you will be glad you did. Nothing is worse than warm drinks by noon.
Keep salad dressings on the side. Dressed salads turn soggy fast in the heat. Pack the dressing separately and let guests add it themselves. Your pasta salad will still look fresh three hours into the party.
Use disposable partyware for the main meal. This is not a compromise — it is a strategy. Heavy-duty plates, real-feel napkins, and good disposable cutlery mean you skip two hours of cleanup and stay present with your guests.
Watch the clock on anything dairy-based. Creamy pasta salads, dips, and cold casseroles should not sit out longer than two hours. Set a timer so you don’t have to think about it.
Set up a self-serve drink station. Put the cooler, cups, ice, and drinks in one spot away from the grill and the food table. When guests can help themselves, you stay out of the kitchen and in the party.
Even though we will be celebrating with family and friends, we always stop to remember the real reason for this special day ~ honoring the men and women who have paid the ultimate price for our freedom. I am so very thankful to those who chose the country over self and have given all for my freedom.

The Sauce Makes the Cookout
I am a firm believer that a great BBQ sauce is the difference between a good cookout and one people talk about for years. These are the homemade sauces I come back to every summer — smoky, tangy, sweet, and rich in all the right ways. Make a batch (or two) the day before.
Make These the Day Before and Thank Yourself Later
The best thing about these salads is that they get better overnight. The flavors settle, everything comes together, and you wake up on Memorial Day morning with one less thing to do. That is my kind of cooking.

I’ll be honest — at most cookouts I’ve been to, the sides are what people remember. These are the recipes I’ve made year after year because they hold their own on any table, pair with everything on the grill, and always come home empty.

Questions You Might Have (Answered Before You Even Ask)
Most of the recipes in this collection can be made one to two days ahead. Pasta salads, BBQ sauces, and cold dips are all better the next day. Just hold off on dressing any green salads until right before serving.
In my experience, it’s a tie between grilled chicken and pasta salad — one always goes first and the other always runs out. I make sure there’s plenty of both. A good homemade BBQ sauce makes the chicken unforgettable.
Nest serving bowls inside larger bowls filled with ice. For anything creamy or dairy-based, keep it in the cooler and bring it out in small batches. Set a timer to swap dishes out every two hours.
Absolutely. The slow cooker mains in this collection are every bit as crowd-pleasing as anything off the grill. Sheet pan sides and stovetop sauces fill in the rest. You don’t need a flame to have a cookout.
Plan on two to three side dishes, one main that yields at least 10 portions, and a dessert that serves 12 or more. For appetizers, one or two dips plus a cold snack is plenty. When in doubt, the pasta salad can always stretch further than you think.
